Fish Varieties (FAS)
Frozen fish that is fresher than “fresh” fish. “FAS” stands for “frozen-at-sea” or “flash” frozen fish and it is considered the most premium fish available. Almost any salt water fish sold in Rochester as “fresh” was caught at least 6 days prior to being at your grocery store or restaurant. Compare that to FAS fish, which is processed and frozen within 4 hours of having been caught…and on the same ship that caught it! Also known as “flash” freezing, it is the state-of-the-art in seafood quality for taste.
